Discover the thrills and challenges of baking naturally-leavened bread—the ultimate “slow food”—at home. Come prepared to sample a number of sourdough breads, feed your new starter, and get your hands properly gooey mixing a loaf of country-style bread to ferment and bake at home. While your hands are busy, we will discuss the history of leavened bread, take a peek at the science that drives the magic, and go over techniques for getting the most out of your home oven. Take home your very own active sourdough starter, plus care instructions and a classic sourdough bread formula.
This program will be led by Trevor Brown of Opus Bakery. Over the past decade Trevor has baked countless successful (as well as plenty of truly disastrous) sourdough creations at home, and hosted a number of sourdough classes at various Slow Food events in Madison. Join him in gaining the knowledge, confidence, and microbes necessary to begin baking world-class bread at home!
